Serves 4 – 6 in 1.5 hrs
2 lbs Pork Belly
1 bunch Green Onion
A Few Slices of Ginger
2 Tbsp Canola Olive Oil
1 Tbsp Yellow Rock Sugar (or ¾ tbsp regular sugar + ¼ tbsp brown sugar)
3 Tbsp Shaoxing Wine
1 Tbsp Lite Soy Sauce
½ Tbsp Dark Soy Sauce
2 cups Water
Cube pork belly.
Bring water to boil and add in few slices of ginger, few stems of green onion and pork belly.
Cook the pork belly until it turn white on the surface and take it out of the pot.
In a wok, with medium high heat, add in Vegeable Oil, Rock Sugar, and Pork Belly.
Cook Until the pork belly turn brown.
Add in Shaoxing Wine, Soy Sauce and Dark Soy Sauce and cook for a few minutes
Add in Water, on med-low heat, cover with lid and simmer for 1 hour until most liquids are evaporated.
Sprinkle some chopped Green Onion as garnish.
Serve with rice.
